Charlotte’s awesome tea party

Wow, this was fun. I spent the weekend in Rotorua, then came home to sunshine and an epic tea party with Charlotte.

And Barbie, Ashely, Flora, Dog-dog, Jemima and special guest Ken. Who was a complete gentleman might I add ;)

Best pancake/hotcake recipe ever

In my kitchen is a very special recipe book. It’s one of those very old ledger books with the brown cover. This book has been in my family for ages and contains recipes passed down through the generations. Plus cutouts from all kinds of old crusty magazines. It even has my attempt at writing recipes when I was about 2! In the back cover is some scientific scrawl about potassium and KHCO3 (whatever that is) written by my great-grandfather “pop”. It has the date Monday, 30th September. I wonder what year the 30th of September fell on a Monday?

This recipe below is from some friends in Canada. It got added to the family cookbook when they came to visit in the early 2000s.

Best pancake/hotcake recipe ever

3 cups of flour
1 tsp salt
6 tbsp sugar (you can use splenda or sucryl)
2 eggs
6 tbsp (90 grams) melted butter
1 tsp vanilla essence
6 tsp baking powder
3 cups of milk

Heat up your frying pan because this won’t take long…

Mix the first 6 ingredients together with the milk on high until smooth. Add more milk or water if the mix is too thick or you want to stretch it further.

Add the baking powder to the mixture and give it a very quick mix on high.

Use a soup ladel to put the mix into the pan as it measures out just the right amount for a hotcake (and doesn’t make as much mess).

Flip when they start to bubble and you will end up with a nice golden hotcake. If you’re doing it right you might end up with a very, very thin crust… yum.

This mix will make enough for 4 people. I usually make a double mix when I cook them for Christmas morning, and we usually have 6-8 people with hotcakes left over.

Great served with fruit and cream or maple syrup, bacon and bananas… mmm… fry the bananas a bit ;)

Splish, Splash and Splosh!

I cleaned out my fish tank, and took some photos of my fishies. Their names are Splish, Splash and Splosh. Splish is the silver one who is not well at the moment, Splash is the big gold one with the pretty fairy tail and Splosh is the little one.

Getting amped for the summer holiday!!

Wow, that’s a lot of twitter updates. I wonder if I should set that up to do it weekly :D Haha! Oh well, microblogging meets blogging, ftw!

So what’s been happening in my neck of the woods? Well, the separation is going okay, nothing nasty has happened. I went on a date, that was awesome. I’ve been having fun with friends, and watching movies, playing games, doing fun stuff.

This Saturday Charlotte and I are heading off to Ohope Beach for our holiday. That will be awesome. I have just realised that my car doesn’t have a jack in it, so I have to get one from a spare parts place before I go. They always have more than they know what to do with. I once dated one of the guys (make that two of the guys) who work at my local one, so I’m just gonna pop in there on Saturday morning as we’re leaving and ask them to give me one. ;)

Charlotte has written her list of things which we need to take with us. I have to make sure that we remember everything, I’m notorious for always forgetting something. I usually forget my hairbrush – which is why I have so many of them cos I have to buy replacements. As long as I remember some games, my camera and my clothes we’ll be ok. And Charlotte of course :D

I’m a bit bummed at how lonely it’s gonna be up there at night because Dave isn’t going. I guess it’ll be a good chance for me to reflect on what’s happening in my life at the moment. Those who know me and live near me know that a lot is happening, and most of it is pretty good. I’m pretty chuffed. I guess as things develop further for me I’ll be able to share more with the world.

I am so over this week!

Wow, what a week from fucking hell.

So the project? Should it be canceled, should it proceed? Will I be left hanging :P WELL FUCK. Ok, it got saved, woot. Big thanks only to those who work for me because they did all the fecking work. Or maybe I did work. Iruno, I’m a bit drunk right now. Bah. Anyhoo, it was a very tiring week at work. Very, very tiring and full of pressure from above and below and from the side.

And Dave and I finally called it a day. Threw in the towel. Called it quits. Decided to part ways. He’s here for another week, but all his stuff is gone. Charlie is probably hit hardest, but she’ll be okay. She’ll see him every day after work still until I collect her. We’ve been friends so long that we’re still friends. Infact we’re about to watch a moovie together and drink beer.

This morning was the Round the Bays. Which was fun. I didn’t do as well as last year. I did a lot more walking this year as I didn’t have to do it alone, which was way more important to me than a good time. I had a great time! Kate and I pwned it up, w00t.

My router died. No more wireless for me. Actually I can still be wireless as I have a wireless access point. Meh, what I mean is that I’ve had to fall back to plan B, which is my old D-link ethernet ADSL router! And it worked just by plugging in woot. Anyway, I could connect to the wireless access point with it but I’m way too lazy. But can I be fucked to do that, I think I will just go and buy a new router instead. That’s the plan. YAY.

Lots of other stuff has happened. Some good, some not-so-good. Very, very interesting. Very eventful.

I think I will go into a self-inflicted coma now. I have had 4hrs sleep last night (on the couch fully dressed and overheating), got up at 6 for the Round the Bays, did that in good time, got home at 12pm and then drank some bourbon in the hot, hot sun. And then Dave and I played soccer because we were both bored and I wasn’t tired. So I’m SO FUCKING TIRED NOW. And I need to stay awake because tonight is the first episode of the new Top Gear season!!!!

Anyway, roll on next week as I need something normal to happen.
